The Northumbrian Sausage Company was founded in 2011 after our director Claire purchased a little butchers shop in the village of Wark, Northumberland to stop it from closing in 2010. The little shop employed 2 people and was making a loss. In order to stop the losses, Claire realised that people were coming from far and wide to buy the sausage made in the shop so by making a little more each week we could sell it to other shops to get by.
In 2011 the company name became Northumberland Sausage Company and we began to expand, opening a shop in the Grainger Market, Newcastle in 2016 and teaching sausage experience day classes at Brocksbushes farm shop, Corbridge. We now make just over 5 tonnes of sausage per week during peak periods of the year from our base in Durham, Northumbria, and employ around 18 members of staff.
The company abides by very strong ethics, allowing only the best cuts of pork shoulder to go into their sausages and making in small batches to keep the product bespoke. We create flavours from the traditional (like sage, pepper and leek) through to the amazing and wierd (like marmite, cheddar and mango chutney).
